Soft and delicious greens

In the past I have always cooked green beans al dente. That was until I cooked these bad boys and I think I have been doing it wrong the whole time. These were soft and delicious. These green beans would make a perfect side dish or are great topped with any type of egg or in your lunch box for work.


Green beans just got a glow up, I will absolutely cook these again and the best thing is they can be eaten hot or cold. 


I always add herbs to any dish I cook for medicinal reasons and for flavour.

 

Unfortunately over the summer I gave up on my beautiful herb garden and most of it died. Because of this I didn't have any suitable herbs to hand so I added a teaspoon of pesto. You can do the same or add some fresh basil, thyme or rosemary.

 

If you don't like olives please add then anyway you can still avoid eating them but they add great flavour.

Ingredients

Olive oil

200g green beans

1 small onion finely chopped

1 clove of garlic chopped

12 pitted olives

400ml passata

Pinch of chilli flakes

1tsp freshly chopped herbs or pesto

Sea salt and cracked black pepper

Directions

  1. Cut off the top and bottom of the green beans. Start off by steaming the green beans for 7 minutes.


  2. Heat some oil in a pan and fry off the onion and garlic for 3-4 minutes. Next add in the passata and the chilli flakes and herbs/pesto. 


  3. Once the green beans are done add them and the olives. Leave for a further 2-3 minutes to come together. Season with sea salt and cracked black pepper to taste.
