Crispy pea namkeen

Healthy crisps - ideal with a little tipple
What the hell is namkeen?? Namkeen are Indian savoury crunchy snack foods. Maybe India's equivalent to crisps? I love visiting all kinds of different supermarkets and this was inspired by a recent trip to an indian shop.
They had so many different varieties of namkeen, I bought 2 types and they were delicious but extremely spicy. I liked the idea of it and decided to make my own.
These are healthier as they are baked and not fried. They are lovely as a snack or would be ideal with a little tipple.
Peas provide a powerful mix of plant based protein, dietary fiber, and vitamins that support overall health.
Store in an airtight container. If you don't think you will eat the mix all at once store in 2 airtight containers to keep fresh and crunchy.

Ingredients
200g frozen peas
Olive oil
Sea salt
Cracked black pepper
1tsp cumin
1tsp ground coriander
20g rice crispies
100g dry roasted peanuts
Directions

Put the peas in a bowl and add boiling water to defrost them, leave for 15 minutes.

Next drain the peas and place them on kitchen roll to dry them. It is essential that they are completely dry or else they won't crisp up in the oven.

Put the peas back into a dry bowl and drizzle with a little olive oil and season with salt, pepper, cumin and coriander.
- Place them on a tray line with parchment paper and bake in a preheated oven at 180 for about 25 minutes until they are crispy. All to cool.

Once the peas are cooled, mix them with the rice crispies and peanuts. Taste and add more salt and pepper if required.
