
Put those blackberries to good use
Autumn is here and after a beautiful summer I am ready for it. Seeing the blackberries brings me a ridiculous amount of joy. I love picking them with my children and using them in lots of different recipes. It's the sign of another year passing and I'm beyond grateful.
Pears are in season now which means they are also at their best. This combination works well especially with the creamy chia pudding.
Chia seeds are abundant in fiber, plant based protein and essential minerals.
These are perfect for breakfast, a snack or a guilt free dessert. They keep well in the fridge for up to 3 days.
This recipe will adapt well to any other fruit in season and at any time of year.

Ingredients
370ml coconut milk (from a tin)
4tbsp plain yoghurt
5tbsp chia seeds
290g blackberries (hold some back to garnish)
2 pears peeled and chopped
2tbsp chia seeds
A drizzle of honey/ agave/ maple syrup
Directions

Pour the coconut milk, yoghurt and 5tbsp chia seeds into a bowl, stir well and leave for 30 minutes to thicken.

Add the black berries and chopped pears to a pot along with a little water. Bring to the boil and let simmer for 15 minutes.

Roughly blend the mix. Add a drizzle of your chosen sweetener. Leave to cool and then add the chia seeds to thicken. Leave for 30 minutes.
- Grab some nice glasses and layer with each mix until the glass is full. Finish off with some fresh blackberries on top.
