Warming Spices & Creamy Coconut

I don’t make dahl often enough. Whenever I do make it, I swear I wont leave it that long again. Its so nutritious, quick and easy. It’s a cracker of a meal. Serve it alone, with greens, rice or naan. Add some mint yoghurt or mango chutney.  

 

This can be eaten at any time of the day. It would make a fantastic breakfast and start to your day. 

 

Lentils are a good source of plant-based protein. Here I use red lentils they cook quickly and are convenient.  

 

I use coconut milk for creaminess and spices for warming flavour and their anti-inflammatory properties. For me what makes this dahl extra tasty and special is the amount of fresh ginger I used. It sings! 

 

Frozen spinach is one of my latest obsessions. I love it because there is no waste and its very handy to through a few cubes of it into anything. There is always a forgotten bag of wilted spinach in the fridge frozen illuminates that. 

 

This freezes well and feeds crowd for a low price point.

Ingredients

1 red onion 

1 garlic clove 

2tbsp grated fresh ginger 

½ tbsp turmeric 

½ tbsp garam masala 

1tbsp cumin 

2tbsp tomato puree 

300g red lentils 

400ml coconut milk 

400ml-600ml vegetable stock 

3 cubes of frozen spinach 

Sea salt 

Cracked black pepper 

Juice of half a lemon 

A handful of fresh herbs coriander/ mint/ parsley. 

Directions

  1. Prepare the ingredients. Dice the onion and garlic, grate the ginger and measure out the spices into a little bowl.  
  2. Heat some oil in a medium sized saucepan. Add the onion, garlic, ginger and spices to the hot oil and cook until the spices become fragrant and the onions are translucent and soft. 
  3. Next add the tomato puree. Rinse the lentils under water and add to the saucepan. Pour in the coconut milk and 600ml vegetable stock, bring to the boil and let simmer for about 10 minutes add the spinach and simmer for a further 10 minutes until the spinach has defrosted. Add more stock if needed. Dahl should be lose but not watery. 
  4. Finish off with chopped fresh herbs, lemon juice, sea salt and cracked black pepper. Drizzle with olive oil before serving.
