My Latest Obsession

 

I love it when a plan comes together. I got my hands on some delicious tomatoes recently, and they inspired a few delicious dishes. This would probably be described as a chutney, but there is no vinegar and no sugar.

 

This is my latest obsession. I put this on every plate of food I eat. It's nice and spicy and full of goodness.

 

Raw tomatoes are full of Vitamin C. Cooked tomatoes are rich in antioxidants that benefit heart and brain health. The ginger, onion, and garlic are all anti-inflammatory and help protect the body from infections.

 

If you're avoiding sugar or shop-bought items, this would be a great replacement for any regular chutneys or mango chutney. The plums and grated apple provide all the sweetness.

 

This makes approximately 500ml. I usually use half and freeze the rest. Store this in the fridge.

Ingredients

2 tbsp Olive oil

1 Onion

3 Garlic cloves

½ Green chilli

2 tbsp Chopped ginger

600g Tomatoes

3 Sweet plums

1 Apple, grated

Salt and pepper, to taste

Directions

  1. Heat the olive oil in a suitable-sized pot. Cook the chopped onion, garlic, chilli, and ginger until fragrant and slightly softened.
  2. Roughly chop the tomatoes and plums (remove the stone), add to the pot. Bring to the boil and let simmer for about 10 minutes while stirring occasionally.
  3. Remove from heat and gently pulse with a hand blender. Keep some texture; don’t blend too much.
